One of the issues that seem to have been reported by multiple users is that collectibles for Gears 5 are not registering properly. This can be noticed if you go back to an early chapter and find out that the number of collectibles is lower. This appears to be a bug but it is not as major or irreversible which is a good thing.
As reported by the community manager of The Coalition, this bug is related to the stats service for Gears 5, which is slowly being restored. Once it is completed, the number of registered collectibles will go back to their actual amount. There is nothing that can be done here by the player so you can wait until the servers are restored.
